While you probably consume onions cooked more often than not, raw onions deserve a place in your diet too. One raw, medium-sized onion contains 60 calories, 1 gram of protein, 200 milligrams of potassium and 11.9 milligrams of vitamin C. They are also rich in vitamins B-6, B-1 and folate. Eating 1/2 cup of raw onions daily helps raise your good cholesterol levels and promote good cardiovascular health.

Red Onions

The red onion has a mild, sweet flavor and a crisp texture that makes it an ideal onion for eating raw. Red onions are medium to large in size, have a deep reddish purple skin and contain rings of white flesh with a hint of purple around the edges. Use sliced or diced raw red onions to add a dash of color, crunchy texture and sweet onion flavor to vegetable salads, chicken or tuna salad and veggie kabobs. Although the red onion is often served raw, it is also delicious when grilled or lightly sauteed.

Vidalia Onions

Use slices of raw Vidalia onion to give burgers and sandwiches a sweet, zesty burst of flavor. Chilling Vidalia onions enhances their sweetness and gives them an even better flavor when eaten raw.

White Onions

The white onion is used to replace a yellow onion when a sweeter, more mild flavor is desired. White onions are round or globe-shaped and have a crisp, firm texture, a white outer skin and a pure white flesh. Dice raw white onions and use them on tacos, in fresh salsa and as a topping for hot dogs. Slices of white onion add a sweet, clean onion flavor to burgers, sandwiches and to vegetable salads.
