Vitamin K Concerns

Next time you cut yourself, consider the role of vitamin K. This fat-soluble vitamin is what enables your blood to form a clot through a process known as the coagulation cascade. For healthy people, even excessive amounts of vitamin K are not shown to be dangerous. However, people with certain conditions, such as heart attack patients, may take medications, like warfarin, that prevent their blood from clotting. In this case, vitamin K, especially excessive or fluctuating amounts, may cause problems.

Broccoli's K Content

Like other leafy green vegetables, broccoli is an impressive source of vitamin K. One cup, with 93 micrograms, has more than 100 percent of the adequate intake for women and 78 percent of the AI for men. Cooked broccoli has even more of the vitamin, with one-half cup providing 122 percent of the AI for women and 92 percent for men.

Safe Amounts for Certain Populations

People taking anticoagulants need to watch their intake of vitamin K. The Linus Pauling Institute recommends people taking these medications try to get no more or no less than the AI each day. Not only is it important not to get too much vitamin K, but also keep your intake levels steady when taking anticoagulants. Women should get 90 micrograms per day and men should get 120. If the only source of vitamin K in your diet in a day is broccoli, one serving is likely OK. However, if you eat other vitamin K-rich foods or take supplements, you may need to limit yourself to one-half or one-quarter serving.

Balancing Your Intake

Make note of other vitamin K-rich foods you eat and don't exceed your doctor's recommended daily intake. Dark leafy greens, including kale, collard greens and spinach, are the top sources of vitamin K with well over 100 percent of the AI. Your doctor may advise you to avoid these foods; if not, only eat a small amount, especially if you're having broccoli the same day. Other rich sources of vitamin K include spring onions, Brussels sprouts, asparagus, cabbage, pickles and prunes.
